This is Jangles.....Jingles brother:)
3/4 cup honey
2 eggs
1/2 cup oil
1 cup pumpkin
2 1/2 TBS water
1/2 tsp. vanilla
1 3/4 cup rice flour
1/2 tsp. baking powder
3/4 tsp. baking soda
1/2 tsp. cinnamon
1/2 tsp. nutmeg
1/2 tsp. salt
Mix liquid ingredients & dry ingredients separately, then mix together. Bake at 350 degrees for approximately 25 minutes, makes 18 muffins. Do not overbake.
Its a new recipe I got down at the "Ashery" where I buy all when cooking stuff in Amish country. This is the first time I have used brown rice. It was almost $6.00 for 2 #'s of it. I love to put lots of butter on my muffins......of course a big glass of milk with muffins is good too!!

I love pumpkin muffins! I haven't made those in awhile.
We had our first frost this morning too, and it was a pretty heavy one. I had gone out and covered everything in my little fall garden and had to tonight too, but want to save the things I have as they're thriving and who doesn't want fresh stuff this late in the year!!!

My 10 month old Boxer pup is experiencing fallen leaves for the first time ... what a hoot to watch him play around and 'try' and catch the ones coming down. HA!

Gee, you finally made a comment! Your just jealous cuz I am the 1st born & cuter than you in pink! You'd probably be afraid to eat the muffins cuz they are made with my farm eggs...at least my niece & nephew eat my eggs!

Those pumpkin muffins look yummy. I'm currently battling with ingredients trying to get a decent pumpkin cake. Afraid fall's going to be over before I get it worked out.
I am so not ready for winter to be here. Every morning it's a huge shock to realize it's not warm outside. Going to have to unconnect hoses today in case the freeze demon comes to call.
I want summer back NOW!
